THIS YEAR'S HONEY:
Pure, Pale, and Perfectly Balanced

aaf96ffb-241d-477e-b904-56a4521c02bf11.png

This season’s honey is something special.

Our 2025 batch is exceptionally light in color — what experts call “Extra White” — and has a delicate, smooth flavor that’s perfect for everything from morning toast to your favorite teas and baking recipes.
But it’s not just the taste and color that make it shine.

In house tested at 17% moisture, this honey is naturally more stable, meaning:

  • It’s thick, rich, and slow to spoil (in the crystallized form the honey is very stiff)

  • It’s ideal for creamed honey (our favorite and arriving in October/November)

  • It stays fresh longer — without needing any additives or pasteurization

Whether you’re after something elegant for your charcuterie board or just want a clean, delicious sweetener in your kitchen, this year’s crop delivers purity you can taste.

If you are a mead producer:

A mead from “Extra White” honey will be pale, floral, clean, and elegant. It will not have the earthy or malty tones of darker honeys. It’s prized for producing a refined, delicate, competition-friendly mead.

PURITY

Our honey has been extracted from hives, filtered, and packaged in food-safe containers. You get the real deal with no additives: pure, raw, unpasteurized honey.

WHY UNPASTEURIZED?

We believe that honey is best left unpasteurized. By avoiding the pasteurization process, we're able to preserve the natural flavors of honey.

While pasteurization can help delay the crystallization process, it also destroys aspects of the honey that would otherwise be enjoyed in its raw state.

Important note: all of our regular raw honey is fully crystallized - we do not sell liquid honey. To make our honey more malleable, you may wish to use different amounts of heat to either soften or liquefy it.

CREAMED HONEY

Our creamed honey is the ideal form of honey for day to day use. Instead of pasteurizing it, we've found a way to keep the honey at a consistent smooth texture by chilling it. The result is a silky white honey that will always remain smooth and never crystallize at room temperature.

It's no wonder that our creamed honey is our most popular product. The majority of our customers prefer the convenience of a soft honey that doesn't require heating to make it spreadable.

If you're interested in sampling our product, we invite you to visit our pickup location where you can sample our crystallized and creamed honey. We're confident that you'll taste the difference and appreciate the quality of our products.

FAQ

What flowers do the bees harvest from?
- Whatever is available from local fields in the greater Edmonton area. The varieties range from: alfalfa, clover, canola, dandelion, and other wild flowers. Every batch is a mixture of these flowers.

Why are there small specks in my honey?
- This is typical of raw honey; the honey on the store shelf comes from raw honey just like ours and is processed by heavy filtration to remove every last micro-particle. This micro-filtering is unnecessary; the raw honey is 100% safe to eat and also makes an excellent starter ingredient for whatever you wish.
